Pupcakes!
Pupcakes Recipe:
makes 12 standard and 24 minis
The Pupcake:
3 cups whole wheat flour
1 tablespoon baking powder
1 ripe banana
4 oz. natural applesauce
2 tablespoons honey
1 egg, room temperature
2 cups water
dog food & treats for garnish
1. Preheat oven to 350*F. Spray standard or mini cupcake tins with non-stick cooking oil. Sift together flour and baking powder.
2. With an electric mixer on medium-high speed, cream banana, applesauce and honey. Add egg until combined. Reduce speed to low. Add flour mixture in three batches, alternating with two additions of water, and beating until just combined after each.
3. Divide batter evenly, filling each about 3/4 full. Bake, rotating tines halfway through, until golden and a toothpick inserted in centers comes out clean, 25 minutes for standard cupcakes, 15 minutes for minis.
The Frosting:
6 oz. cream cheese, room temperature
6 oz. peanut butter
2 tablespoons honey
With an electric mixer on medium-high speed, beat cream cheese and peanut butter until fluffy. Add honey, and beat until combined.
To Finish:
Pipe neatly or spread a spoonful of frosting onto the top of cooled pupcakes.
Sprinkle on dog food, or place a special dog treat onto the top of your pupcakes for presentation and let the puppies enjoy!
