Blueberries & Cream Cupcakes
I never knew a cupcake could taste so amazing. It was sweet and creamy and moist and flavorful!
I could go on and on about these particular cupcakes, and the best part about them is that they were relatively easy to concoct. Perhaps I am getting the hang of this cupcake baking thing!
The Cupcake:
I always have to taste the batter before I actually bake them, and when I did I knew they would be tasty! It had an excellent consistency, and the blueberries folded in allowed for the perfect scoop containing 3 to 4 blueberries per cupcake.
Today I was determined to bake mini cupcakes in addition to the basic size, so I bought a mini cupcake tin and mini blue cupcake liners especially for this blueberries & cream recipe. They turned out so cute and little, 2 bites worth, but just enough.
The Frosting:
Well now I know why it's called "whipped cream!" You really just whip, cream until it's light and smooth. When the cream forms soft peaks, you add in just a 1/4 cup finely sifted powdered sugar.
The frosting wasn't overwhelmingly sweet to taste out of the bowl, but atop these delicious blueberry cupcakes, it was one sweet treat!
Overall Review:
I will be making these cupcakes forever! They were so tasty from the cupcake to the whipped cream frosting, to the fresh blueberry garnish that burst into each bite. I wanted to eat every single one of them.
I highly recommend making these for yourself, and like I mentioned earlier, the recipe is pretty simple so never get intimidated by trying something "out of the box" ;)
