Today was a day I felt really inspired to bake. I had not been in the kitchen for awhile and I had a mouth watering recipe sitting right in front of me, thanks Adrianna!
You may have seen this recipe I posted last month, Coca-Cola Cupcakes. Well of course, I put my own spin on things to create a unique variation I could share with you guys.
Instead of Coca-Cola I used Dr. Pepper Cherry soda. I call them, “Dr. Piper Cherry Chocolate Cupcakes”.
When I was little, we used to call my dad Dr. Pepper, because he is a doctor, Dr. Brion Piper - and he always enjoyed an ice cold glass of Dr. Pepper. So these cupcakes were made in honor of my pops and appropriately named after him as well.
Whenever I bake a new recipe with my own variations, I am always hesitant and fearful that I have wasted my time and ingredients on something that maybe I should have just stuck to the recipe on.
In this case, I was overwhelmingly surprised and pleased with myself upon the first sight and taste of these amazing little treats. Not only did the presentation win me over, each bite of these cupcakes made me smile. It really is important to be impressed with your own baking, if not, or at least in my experience I don’t feel very confident sharing them with my friends.
These cupcakes put my confidence in overdrive as I happily dished them out at work where I was nearly attacked in the lobby. People were running from their cubicles like it was a fire drill and needless to say they all loved them.
The cake was the perfect chocolaty richness, the frosting was light and just sweet enough, and the cherry on top.. well, was the cherry on top!
