Peanut Butter & Jelly Cupcakes
It's peanut butter jelly time! These cupcakes were so much fun to make. Peanut butter and jelly is such a classic treat, I just had to try it as a cupcake.
They tasted so much like peanut butter cookies, and the jam garnish really helped to make these cupcakes look so appetizing!
I was not the biggest fan of the "creamy peanut butter frosting", the recipe calls for cream cheese and whipped cream which I thought would only turn out amazing, but I must say they were a little too cream cheesy for my taste. My other cupcake tasters did not feel the same way, so don't let my opinion turn you off.
The Cupcake:
The batter smelled so delicious as I mixed in the peanut butter and tasted so sweet and creamy. The recipe calls for creamy peanut butter and peanuts, so I went ahead and used chunky peanut butter!
The cake was a little dry right out of the oven, so I knew it needed its frosting before I could give it a full review.
The Frosting:
Creamy peanut butter frosting for sure. Very creamy, very peanut butter tasting and the perfect compliment to these little peanut butter cupcakes.
The frosting recipe also calls for creamy peanut butter, so I put my chunky peanut butter into the blender and made it creamy. As I mentioned earlier, I thought it was a little too cream cheesy, but overall perfectly paired for this recipe.
Overall Review:
I would make these cupcakes for an afternoon with friends and coffee. They are fun and different with a twist on a classic recipe for peanut butter and jelly.
My favorite part was presentation. I had a lot of fun photographing these cupcakes with a dollop of boysenberry jam and a tall glass of milk!
